Bourbon Peaches and Coconut Cream Pancakes with Bourbon Cream Syrup

Mmmm... on my list of booze soaked fruit, bourbon and peaches definitely comes in the top 3. Add in a dollop of coconut cream, and we're talking food fantasy time. This recipe does so many things right -- except cook itself (darnnit!).
