Ricotta Pancakes with Maple-Bourbon Whipped Cream

Ricotta pancakes are like a gift from heaven. Seriously! The first time I ate some, I damn near licked the plate spotless. Adding a dollop (or 4) of Maple Bourbon Whipped Cream to these pancakes is like handing me the six winning lottery numbers. So good... so riiiight!
